In his best selling book, "Grain Brain," Dr. David Perlmutter notes that many brands of soy sauce contain wheat. On page 225 of the hard cover edition he says, "Note: Although some naturally brewed soy sauces are technically gluten-free, many commerical brands have trace amounts of gluten." Fifty-six years after Joyce Chen opened her first restaurant in Cambridge MA, the Whole Foods in Framingham MA is featuring Szechuan Hot and Sour Soup. This is one of several northern-style Chinese dishes that Joyce Chen helped introduce to the U.S. She also introduced her customers to Peking Duck, Moo Shi Pork, and Scallion Pancake.
