In his best selling book, "Grain Brain," Dr. David Perlmutter notes that many brands of soy sauce contain wheat. On page 225 of the hard cover edition he says, "Note: Although some naturally brewed soy sauces are technically gluten-free, many commerical brands have trace amounts of gluten." He goes on to recommend using tamari soy sauce as a gluten free alternative.
